Just finished this book by Michael Cecchi-Azzolina a 35 year veteran of the NYC resto scene. Like Bourdain in style but more informative. A realistic look at what goes on behind the scenes in the restaurant world.
 
I haven’t read it, but heard a 50 minute interview with the writer on “Fresh Air” (NPR). A great interview, with many stories . . . one of which was that with so many people pushing currency into his hand as they sought a table or a better table, he learned to distinguish, by feel of the bill, whether it was a 20, 50, or 100. Sounds like a great “read!”
 
Great tip...just ordered from "you know who" in order to get it before heading to SB on Saturday
