Thanks Andy - this is great! I’m surprised to see scotch bonnet pepper. Aren’t those quite spicy? I’m a bit of a spice wimp and don’t recall the sauce chien in sbh being problematic for me.

In my opinion, Sauce Chien, as served on SBH used to have much more heat than is typical today. Andy's recipe sounds about right for the traditional recipe, which I enjoyed decades ago. I was under the (mis)belief that the Sauce Chien referred to the "bite" of the sauce. I've learned here that the name may be more about the knife used to prepare it.

1/4 of a small pepper is not very spicy to me.

I have never tried this sauce. Isn't the sauce too spicy? With what meals it could be served? Can the spiciness be adjusted?

I know the sauce typically contains ingredients such as onions, garlic, bell peppers, vinegar, mustard, and hot peppers, which give it a tangy and slightly spicy flavor. Some variations may also include herbs such as thyme or parsley. Usually, I prepare an Alfredo sauce recipe but always look for new alternatives and options.

Funny coincidence. The St Barth Film Festival opens this week—Wed. evening 8pm at AJoe in Lorient (free admission)

Friday’s evening’s film and soirée involves Sauce Chien, famous knives, and Accras.

L'âme du couteau-chien
(The Soul of the Dog Knife)

“L'âme du couteau-chien (The Soul of the Dog Knife) is a documentary that straightforwardly tells the little-known story of "this knife engraved with a dog," which today is part of Creole heritage and as in everyday life, has become a staple of West Indian society. ”
