In my opinion, Sauce Chien, as served on SBH used to have much more heat than is typical today. Andy's recipe sounds about right for the traditional recipe, which I enjoyed decades ago. I was under the (mis)belief that the Sauce Chien referred to the "bite" of the sauce. I've learned here that the name may be more about the knife used to prepare it.

1/4 of a small pepper is not very spicy to me.

I have never tried this sauce. Isn't the sauce too spicy? With what meals it could be served? Can the spiciness be adjusted?
