Dover Sole: fresh, wild, product of USA, never frozen, in Florida. True?

I took this photo in Naples, FL. Is everything on the label true and correct?

Bart....product of the United States says it all ......buy it..because it's the SAME freakin fish as the Sole which comes from Dover...and yes it's probably Georges Bank Sole and reasonably fresh ...

I ll give ten thousand bucks to any "foodie" who can blind taste a sole from Dover a sole from Georges Bsnk and a sole from Pacific Northwest and identify all three correctly....

I eat far more sole then all of you and I couldn't do that
 
Have them put a piece out for you to smell....should smell sweet.....ask him to press down on the flesh....if it was never frozen the meat will spring back up...

take those filets.....brush em lightly with melted lemon butter, dip em in an egg batter lightly seasoned with Old Bay.....roll em in panko....drop em in hot peanut oil....fast.....in and out.......

Do some hand cut sweet potato fries and Homemade Cole Slaw ....

No It won't ......I let the filet sit for a few minutes after I brush it to let it incorporate.......and fish cooks better in peanut oil ....:tongue:

another twist on this is take some cashews or macadamia nuts and chop them in a food processor into little bits and pieces and mix it into the panko .....
 
The true Sole from the Eastern Atlantic ocean is NOT the same specie that is harvested in the Pacific and they should not be confused with one another. One is a sole and the other is a flounder, they are not from the same family, yet the Dover Sole designation is borrowed from the true Sole in the Atlantic to name the Pacific specie.

Eastern Atlantic specie : family Soleidae (Sole), scientific name solea solea
Eastern Pacific specie : family Pleuronectidae (Flounder), scientific name microstomus pacificus

It's like saying that Chilean Sea Bass is of the same family of any other Sea Bass, it's not, the name is simply borrowed for commercial purposes. Same thing can be said for Kobe beef. As long as those names are not Protected Designation of Origin (PDO), any one can use them and lead the consumer to believe that they are buying the real thing, but they're not.
 
the difference between a sole and a flounder genetically is so insignificant its not funny....they are FREQUENTLY packaged and shipped one for the other.....I know this...I am on that side of the buy/sell equation...and truth be told its not really a bad thing because 99.9% of people couldn't tell the difference of each by sight OR taste.....so who cares?...... its moot...

but yes I agree...as long as there are no labeling laws its a circus out there in terms of what is labeled what
 
Bart - Both of our Whole Foods stores have excellent signage as to fresh/frozen, sustainability and how it was harvested. last weekend the shrimp we bought was from FL, arrived Saturday morning unfortunately frozen, but they weren't bad and I can't remember where the scallops were from, but they were a US product. I have also bought shrimp this winter from Fresh Market which were fresh from SC. As close as we are to the coast we do not have a good fishmonger in town, so I don't have a choice but to get seafood at Whole Foods. We do have a group on campus that works with local fisherman and they deliver to Duke each Thursday, but we don't eat enough to buy a share in the program.

scallops were probably from New England...almost all scallops are from New England

The scallops were delicious. Just seared with butter, salt, and pepper.

thats the only way to do them if you ask me...maybe a squeeze of lemon...they dont need much help..their taste can stand alone
