The true Sole from the Eastern Atlantic ocean is NOT the same specie that is harvested in the Pacific and they should not be confused with one another. One is a sole and the other is a flounder, they are not from the same family, yet the Dover Sole designation is borrowed from the true Sole in the Atlantic to name the Pacific specie.
Eastern Atlantic specie : family Soleidae (Sole), scientific name solea solea
Eastern Pacific specie : family Pleuronectidae (Flounder), scientific name microstomus pacificus
It's like saying that Chilean Sea Bass is of the same family of any other Sea Bass, it's not, the name is simply borrowed for commercial purposes. Same thing can be said for Kobe beef. As long as those names are not Protected Designation of Origin (PDO), any one can use them and lead the consumer to believe that they are buying the real thing, but they're not.
