Always littlenecks or middlenecks to start. (after a Le Balthazar or Corpse Reviver #2)

After, usually steak-frites. They've changed the cut from the classic rumsteck to a ribeye. I messaged staff to inform that they had incurred my displeasure.

Did you send your message via postcard to Keith?
For anyone who follows him on IG, he sometimes posts the (often entertaining) Balthazar cards patrons leave for him after dining.
Speaking of which, for anyone who has not read Keith McNally memoir “I Regret Almost Everything” I recommend it. Of course only after first reading “Treasured Island”☀️
