Shellona

Was curious as the Petite Plage's are owned by the Groupe Annie Famose
Don't know the connection, if any . . . perhaps Annie Famose Group leases the space from Groupe Barriere? . . . maybe GB sold its interest in the space to Annie Famose Group? (though, I doubt it).

I can see that. As I understand, Club 55 started out as a pop-up to feed the cast (incl Brigitte Bardot) and crew of "Et Dieu...Crea la Femme [1955]" during the filming of the beach scenes, thus the "55".
Loved Le Girelier! Did lunch both visits. Really nice prix fixe menu and great people (and yacht) watching. Our daughter and friends had dinner at L'Opéra last summer and enjoyed it. Didn't sound like our cup of tea though.
We went to the early sitting of L'Opéra so I am guessing it was a little less crazy than "late night" 😅

Must have been. Our daughter talked about the staff's champagne conga line being led by a motorcycle through the middle of the restaurant!

We only had lunches around the harbor, including numerous aperitifs at Senequier. Dinner was around the Place de Lices and beyond (Salama & La Ramade). Really enjoyed Saint-Tropez and can't wait to go back, although it's a bit out of the way.

Did Pascale Ramette also own a [partial] stake in Shellona?

is Monsieur Ramette a restaurant owner or a restaurant consultant ?
I believe he is an entrepreneur and the owner, starting with Jao, that is according to Dennis was his best (I loved PaCri more). He was in tennis before moving to the hospitality according to the lore.

I ditto that. Three great restaurants (adding Lesprit) near each other + Tamarin + GdS (somewhat). Although PaCri was the shortest living

JAO was extraordinary . . . in cuisine, style, service, & savoir faire!

Pascal has had a long, apparently successful “run“ (& not yet at an end!). In our acquaintance, he always is (& has been) a gentleman — refined, gentle, & considerate. I don’t know the financial arrangements that may be part of his restaurant associations, but the colleagues in business with him seem to be well served in the relationships.

I see that Mr Ramette is associated in some capacity with the NY hospitality group that has Gypsea.
Is he also associated with DB Group ?

”Is” or “used to be?” My impression is that it’s the latter.
That would seem to make sense.
Would seem surprising for competing hospitality groups to engage the same consultant. If that’s what he is ???

My understanding is that Shellona and La Guerite are (or were) connected.

i believe that the role was Business Development.
