We were in Saint-Tropez a couple of weeks ago and walked by "Pablo" several times. While the adjacent Place des Lices was always active, I only recall seeing a bored hostess at Pablo.

Place des Lices is between the AirBnB and the town, so all hours. First noticed Pablo while watching the boules tournament in the Place one night maybe around nine. Recognized the name from earlier threads here and was surprised as at first glance it appeared closed. Had dinner till maybe 10 another night next door at the Cafe des Arts. Seemed odd as all the other restaurants we went to were quite busy as people had begun arriving for the voiles later that week. Maybe they cater to a different crowd that comes in the summer rather than September.

Got it.
I see they’re open til 3 am. Maybe the crowd they attract shows up after Mme Cassidain and I are fast asleep.

Or maybe they have no crowd 🤷‍♂️

Ditto us

Regarding a different post, after leaving Saint-Tropez, we drove through Cassis on the way to Aix. We were running late and didn't find any immediate parking spots around the harbor. Definitely putting it on the list for future travels.

Pablo St Tropez gets a 3.4 stars on Google reviews - not great. While perusing the reviews, I saw other St Tropez restaurants mentioned: NAO, Pearl Beach, Petite Plage.....
