Reliable reporting is that ZUMA (“contemporary Japanese cuisine”) will be filling the space in the new season:
. . . looks like no expense is spared in design.

. . . not to forget that Kinugawa will be opening in the new season at its shiny, new location in St. Jean!Good scoop, Dennis!
I have been to the Zuma in Miami - it was a Sunday brunch with a large party and it was very good. I can't speak to any à la carte items as the Sunday brunch was more of a buffet set up - but I do remember everything we had was delicious.
It's not exactly what I would expect to have on SBH, however. Now we will have 3 high-end Japanese restaurants on a tiny French island in the Caribbean....![]()
Rarely had to use it, but what luxury when needed! The retractable roof is SWEET!
Where?. . . not to forget that Kinugawa will be opening in the new season at its shiny, new location in St. Jean!
Perhaps not the same hotel in Paris, although I think it is, but Fabrice is headed there (@lebristolparis) after 12-years at Eden Rock. Jean-Alexis will take over ER on the island. I remember Max too from the OC. If he is still there when Fabrice arrives, perhaps there will be some SBH reminiscing taking place…Speaking about short but beautiful life of Ocean Club, we were eating in Parisian Bristol hotel, and their very able sommelier Max said that he has worked for a few months in St Barth Ocean Club, and fondly remembers that time.
The OC had valet parking on the street running behind it. It was mainly parking for the staff however they would strategically place the cars to the right after the gate and charge €20. They actually gave us our own key card to use because they got so fed up with squeezing cars in…it made it easier for us to just park ourselves… but inevitably someone would box us in… which led to a longer evening than planned… this was back in the day before we adopted the little epileptic dog, so now we have to plan our restaurant escape to be home for her late-night meds... point being, if the new place tries that experiment again, they will need a better plan! As with everything else OC, there was some controversy over the parking space. I believe (but could be wrong) that when one of the owners had his yacht in for the higher season, he demanded all the parking was his…thus the valet service was cancelled (but the key card worked if you went left.) New cards were eventually issued after it closed a while ago, so, as it goes, that too has passed.hopefully, they'll have a valet service . . . unlike OC
agree, probably most seductive ambiance/setting on the island
Save me a seat!So I just happened to be looking at my favorite hotel in St-Tropez and guess who they have for their restaurant in Summer 2026? When I was there 2 summers ago, they had a Michelin starred restaurant that was not at all impressive so I guess they changed it out for a concept restaurant..interesting! I'm sure it is better than the restaurant they had...Zuma has lobster with spicy ponzu sauce..let's pull up a chair right now!
ZUMA - JAPANESE RESTAURANT
Zuma, the Japanese concept, is taking up summer residence at the Byblos.
I just checked the Maki Rolls (California style) and prices are super reasonable as long as you stay away from rolls with caviar or truffle. All rolls are between 19 and 27 Euros! So even cheaper than the good ones in California! I see indulgence coming...if you click on Discover below, you can get the entire menu. And then fire up your plane...we're going for dinner!
