Well maybe its easier to serve in the tropics. Just put the cheese out on a plate and it will melt on its own. No need for a fire.

There is a place we go to in Utah where they have wedges of raclette on holders in front of a fire place and you just go and take a plate as the cheese drips on to it.

yes that's a traditional way in France as well...
