Looking for private chefs for dinner in the villa

I'm going to St Barts at the end of November and want to set up a dinner in the villa with a private chef. Last time I was there I had the Cordon Bleu team prepare a five course meal for our crew - they were a lot of fun, and the meal was great! A friend refered me to Ludovic Rousselot or "ludo" as a good chef...and I've also heard about David Cocktail and seen ads on this site for a chef Bernand and a chef Bertrand.

Has anyone had any of these chefs prepare a dinner for them? Appreciate the feedback...I'm already tasting the food!
 
I was very happy with the dinner done for me by Chef Bernard Javelle. Click on Eating/Drinking at the top of the page, and then Private Chefs.
 
Kev - approximately does a dinner for two cost...roughly? I know it depends on what you have, etc. Tip the chef?

It comes out to about the same price as dinner at a very good restaurant, perhaps a bit more. Buying wines through the chef is a better value than wine in a restaurant, but you might do even better buying them retail.
 
Thinking of doing it as a surprise for my husband during our stay. Any tips you or others can give me would be helpful as I've never done this before...we're going in October so is there a better day to book? Weekend or week day? Would most likely buy wines from Match. Any prep involved on our part? Obviously we can't swim naked in our pool until after he leaves :>)))) I'm assuming we choose everything prior to arriving? Does the chef use our utensils, pots, etc or bring his own?

They tend to know the villas and bring what they need to supplement. The chef may even do a fly-by to check out the equipment before the day. Any day will work, but they are in demand so book early. No prep, just sit back and relax or watch if you like. We tend to let the chef pick the menu based on what ifs fresh and looks good to him, so I wouldn't set the menu until you arrive.

In my opinion, stay away from Sundays and holidays, and watch out for unexpected holidays. On one trip I was bitten by Pentecost Monday.

As to the chef doing a "drive by" to check the facilities at an unknown villa, you can ask that he arrange to do that prior to your arrival, which will help maintain the surprise.

Menu - Yes you can work it out ahead of time, which is what I prefer to do. Sometimes local events - strong offshore breezes and high seas keeping the lobstermen from going out - can require a "game-time call".

As to swimming naked in the pool, proper decorum would advise against it, but if you do then don't expect the chef to hand you a towel when you get out.

I highly recommend doing a chef's dinner. The romance value alone is huge. One thing that I have always said is that villa renters don't leverage their villas enough. We rent villas with million dollar views, and then use them as little more than bedrooms. Nobody loves the restaurants of SBH more than I do, but there is a lot to be said for a simple takeout roasted chicken lunch that is enjoyed poolside, or a chefs dinner, served poolside with that million dollar view that you've already paid for.

If you're not comfortable working things out with a chef that you don't know, and possibly with a language barrier (I don't know how well you speak French, but I do know that some of the chefs don't speak fluent English) then work through Premium IV. Premium IV works with several chefs. Jim, with his British heritage, speaks the Queen's English perfectly well. Vincent, with his French heritage, speaks French like the native that he is, but is also fluent in English.
 
yesterday, for my birthday , Jean-Paul my husband,surprise me with a special dinner only 4 of us ( us with my two lovely sons)
it was a in a great place, table setting just for us!
at the beach! near to my family villa at Lorient!
the chef was Bertrand of Caf

FOODLOVER is Bertrand DANTEC, and Deb and Company are right on here. Not that any of the chefs are even average, but Bertrand is a cut above. "Beg him" to bring and leave you some of his homemade yogurt for breakfast the following day & oh what a surprise you'll have. Do the wine yourself. Let him 'recommend' what is fresh, great for the menu.

I think he is gone from the Hamptons and in France now, but normally he is back on SBH by October.

I worked through both e-mail and telephone. One thing to watch out for - if your contact number for the chef is a mobile phone (if it has a 690 country code) then you may not be able to dial it from your villa phone. Fortunately, I had both a working mobile phone and a phone card in my pocket, and was able to contact the chef and work out a last-minute menu change required by the unavailability of lobster.
 
Thanks to all of you for the feedback on Bernard, and Bertrand. Both sound excellent. I haven't heard from anyone who tried David Cocktail or the others listed above, someone must have tried them, non? I totally agree with the comment made somewhere in the thread about taking advantage of the villa for a meal - its a great way to relax with friends, enjoy the terrific views and breezes, the cool lighting in your pool, your own music etc.

Good tip on buying your own wine at Match instead of having the chefs buy them. When I set up the dinner for 8 with Cordon Bleu they bought the wine, an unremarkable St Emilion that wasn't a great value...but the Taittenger Rose Magnum they started us off with was fantastic! Still, I like my wines and next time I'll buy the wines and let the chef focus on what they do best!

I have used David Colpaert on many occasions, in fact he was the first island chef we used. He is on the island all year and does an excellent job. Very skilled on the table and ambiance, and he is an excellent chef.

I noticed on your bio that you were lamenting St. B's lack of a boule court like you enjoyed in St. Paul de Vence. Our little island does have a rather nice, lighted boule court in Gustavia that surely you've seen. There's at least one more facility that I know of in Flamands. When you come down you should try one and give us a review. You'd probably be the first from the forum to engage in this local cultural experience.
