Fabrice has left Eden Rock

I will miss him, fabrice moizan had been the manager for around 12 years. he has left for Paris where he will be president and manager of le bristol paris hotel. his assistant jean-alexis costa at eden rock will replace him..... times they are a changin'

Sad for guests, great for Fabrice. He was great to to deal with, on the few occasions when I needed just a touch more from ER, and that might even have been when we stayed there.

I’m not 100% certain, but I think that it was Fabrice who challenged two of his waitstaff to see who could debone our Dover Sole mains the fastest. I complicated the challenge by offering a €20 prize for the fish with the fewest remaining bones. My recollection is that there was one winner, both on speed and deboning.

Super memory, Kevin. Thanks for sharing.Thanks to encouragement from Rosemond and JEK, I do it myself. Not hard and fish does not cool down as much as it does during the waitstaff deboning
