Creole sauce recipe

Does anyone have a recipe for the very simple creole sauce often found with mahi mahi in SBH? There are many creole sauce recipes online, but every one I've found has tomatoes and the sauces I've had in SBH seem to have oil, sweet peppers, garlic and/onions and maybe other stuff, but I don't think tomatoes.

We are hosting a "villa-themed" dinner party this weekend and have recreated a similar sauce. From our research, it is called "Sauce Chien". Maya told us what ingredients she uses in her sauce and we tweaked it to make it closer to what we had at Grain de Del (more oil, less water).

Sauce Chien

1 Shallot, finely chopped
1 Habanero, finely chopped
1 Clove Garlic, finely chopped
Chives, finely chopped
Thyme, fresh, finely chopped
Parsley, finely chopped
Salt & Pepper

Mix and steep in 1Tbl boiling water

½ Lime, juiced
¼ Cup Olive Oil

Thanks Peter! That looks about right. I wonder if there are some restaurants that don't use habanero peppers.

In my experience, many restaurants have taken the "teeth" out of their "dog sauce" (Sauce Chien).

Also researched that the name "Sauce Chien" comes from a brand of knives (or at least a particular knife) with a dog embossed on them that are popular in "Les Outre-Mer". Has anyone seen one of these for sale on the island? I'd love to get one next visit.

When I made our recipe last week, I just added the green herbs until it looked (and tasted) balanced. I suppose it was about a Tsp each. I also avoided using a food processor as I wanted to make it similar in appearance to the sauces at Maya's and Grain de Sel (crisp defined cuts). I'll definitely have to try adding ginger and the pinch of allspice.
