"Chef's Table" dining

My favorite night by far on our last trip in 2023 was at Zion sitting at the bar/Chef's Table and watching the kitchen in action. Our concierge had messed up our reservation so JB wasn't expecting anyone up there that night, but when we politely asked as we were very much looking forward to it he graciously accommodated without hesitation. Did the wine pairing. Overall it was exquisite and one of the most exceptional nights I've had at a restaurant in my 37 years. Almost lost my wife to the Frenchman that night I think.

With Zion gone, are there any other "Chef's Table" options that anyone has done at other current restaurants? I know there are some where you can sit at the bar and watch the kitchen work, but the set menu and wine pairing and personal service while sitting at said bar, a la Zion, is what I'm thinking of here. Dennis I know the folks at L'Esprit essentially did this for you one night but I don't think I carry the same cachet with the chef there, to say the least! Lining up restaurants for May and in true "so many restaurants so little time" fashion trying to make sure I make it count.
 
If you request it ahead of time (speak to Mathis, the host / maitr’d & wine expert), you can get seats at the counter that was JB’s “Chef’s Table.” I prefer the two seats at the end — best for watching action in the kitchen. Introduce yourself to the chef (Fabien) — young, charming, & very talented (this time, you’ll be at risk of losing your wife to an Italian!).

Also arriving in May and loved Zion. Looking at the pictures of La Castina is it where Zion was?

A couple of views today from end (i.e., corner) of the old Zion “Chef’s Table” . . . it’s a charming perch from which to view what’s going on in La Casina at dinner.

Oh that brings back lovely memories. We have sat in those two seats many nights when it was Zion. Sooo looking forward to our trip in May. House hunting again.
