best crabcakes I ever had were in two places along the Intercoastal Waterway...one was in Great Bridge Virginia..one was in Coinjock Marina, North Carolina...the dinner I had at Coinjock ( crabcakes, stuffed flounder, hush puupies and peach cobbler was to date one of the most fantastic dinners I have ever eaten in a restaurant....the restaurant was closed all day and the aroma coming from it was incredible and people who knew the deal kept telling me to be there when they opened for to die for food...and it was

Wendi makes a very good fish cake with Sole or Cod..whatever I am flushed in at the time...and she actually has a low fat way of doing them where they still taste great
 
Mike- I don't know how fish cake could be high fat anyway. Low fat = Light Mayo. The problem here with crabmeat is it's so expensive and spoils readily, the fish stores have been stocking the pastuerized kind- it's OK if you are making au gratin or imperial- it's the additions that make it taste good. Otherwise, I have to go to the shore for fresh backfin crabmeat.
 
I agree..crab meat is so perishable..not worth it unless you get can get it fresh

she does the cakes with light mayo and yogurt...and crisps them in canola oil instead of butter in the cast iron pan..then in the oven to finish
 
yeah Wendi trys to bake everything..I am the fry addict..

my heart clogging warm crab dip??

crabmeat (FRESH )
cheddar cheese ( a good aged Vermont )
cream cheese
chopped scallions
chopped chives
chopped parsly
chopped red pepper
a dash of old Bay

mix it all up....bake it off....serve with crackers

take extra Liptior...LOL
