I will make turkey stock with the carcass and have turkey noodle soup next week. Turkey club for lunch tomorrow.

I've done it....just ok....no wow factor....the croquettes have the wow factor...

or if you wanna do something really decadent...take your stuffing...make a ball of it around a piece if turkey......pack it into a tight ball....egg wash it..roll it in bread crumbs or panko....drop those little suckers in a deep fryer ....take em out and put a little gravy over em...really good....bon appetit
