Restaurant report 18-31 January 2015

I dont know..I'm skewed..I ve only had mainstream cheese from Wisconsin....on the other hand my my wifes uncle is a chef in Vermont and he often brings us these locally cave aged cheeses that really never make it to any mainstream market that are to die for good.....

Check out http://www.hookscheese.com/cheese descriptions.html. Everything they make is wonderful. For a rare treat try their 15-year cheddar. I should also say that I truly love the French cheeses in SBH. Looking forward to a trip this fall to Switzerland to see what treasures are in store for me. I'm in awe of the descriptions of the lengths they go to to give their cheeses a unique terroir.
 
You'll still find at least some cheese being cut to order at AMC in Gustavia and the Airport Superette.
 
I dont love the fact that they pre pacakage the cheeses now instead of cutting to order like they used to.....

They only cut to order at Oasis and at some places, there were both prepackaged and a cut-to-order option. Can't remember which places though.

yeah thats where we ended up going for it...Wendi had an absolute fit the first time we walked into Marche U and saw only prepackaged cheeses....she also gave the cheese lady an earful in French....LOL
 
You forgot the better beaches part. LMAO. Some people take you too seriously.

That's rich coming from you Andy. Both on the "too seriously" part and the amnesia about the beaches. You have the best memory in the world when it's time to correct someone on some trivial point they got wrong, but suddenly you forget 12 years of history on this site

I won't use quotes since it seems to struck a nerve, but like I did above, I'll paraphrase your postings on beaches.

On many occasions you'll wax poetic about how great Colombier is (no people, no noise, no this, no that) while trashing other beaches like St. Jean. Or maybe it's just Nikki Beach that you trash. Either way, you've been quite vocal on acceptable and unacceptable beaches. And food. And boating. And the Cowboys:tongue:


I don't know if you ever read your posts, but many of them have an air of "I'm doing it right and if you're not doing it my way, you're doing it wrong". If you'd like me to post examples, I will (actually, I probably won't) but that's the way they come off. There's nothing wrong with preferring local, organic, freshly prepared, but that's quite different from raining on someone's parade for posting they "loved the Dover Sole"

And I'm sure you're a wonderful cook. Hell, I've used some of your recipes. But again, having a great meal in the villa and deriding (perhaps gently, but still deriding) someone's expensive meal somewhere (God forbid it's Maya's) are two completely different things.


To summarize for you and Andy since he seems to be missing a lot in this thread: Someone commented on the superior midwestern beef not holding up to whatever they serve on St. Barts. That reminded me of many of your comments about the superior seafood you eat at home (and trade for ski passes). I noticed the similarities and commented on it. Apologies for not using your actual words in quotes, but I'm sure all other loyal readers of the site knew what was happening there (paraphrasing your rallying cries).


Now, changing gears, coincidentally, I cooked some shrimp at home last night from our local Safeway. It was from somewhere in Asia (maybe Cambodia, not 100% sure). As I was pealing them, I made a mental note to ask you about this (true story….last night!). What kind of shrimp is the right kind to eat? Is it only Gulf shrimp? And to they sell it in regular grocery stores? Obviously you can't answer for VA stores, but where do you get the good stuff?

And I do honestly thank you for bringing that issue (and many others) up on this site. I wouldn't have known about the "cesspool shrimp" without your rants and ravings. :cool:
 
like everyone else I have an opinion on things......

and like many in here....I like to sir the pot and break balls every now and then...harmless fun.....and when someone throws a verbal punch at me rest assured I'm punching back...its the way my Daddy raised me

I am not afraid to make enemies with my outspoken attitude....been that way since the Doc slapped me on the ass to take my first breath....aint gonna change....I work in environments ( fishing and athletics ) where if you arent VERY strong with your words and attitudes you will be quickly consumed by someone who is...it is what it is and I am who I am....

and Cambodian shrimp is garbage...all Asian shrimp is garbage....its the wild west over there....no regulations and even less accountability...and its not about taste either...its about core threats to ones health to consume them.....Shrimp marked "WILD ' from anywhere is a much better choice...The Gulf....Southeastern USA coast....Mexico...South America.....all good if its wild caught whcih it has to say now.....

and show me the last time ( recently ) I said something negative about someone s specific meal in here???...Andy and I and others do that elsewhere now to spare feelings...:D

Oh and Bart...I hosted some of the largest on island and off island forum gatherings ever through the years...and continue to happily get an astounding number of forum visitors both in ski country and on the Cape coming to visit and play with me.....

I actually PM'd Steve with an abbreviated version of what I posted, and I did mention to him about Mike's feelings on SBH Dover Sole, BUT(!), I told him that it's been ages since he did any Dover Sole bashing……………so Mike, I fully agree with your "the last time ( recently ) I said something negative about someone s specific meal" (quotes used as it is an actual cut and paste! :cool:)

My cousin and his partner spend a week in P-Town every summer. I've been telling them about your boat and trying to get them and their crew out the water for a day with you, but I think it may conflict with their other plans

BTW, I'm a firm believer of enjoying the fish of the region. I've never understood things like swordfish in the Caribbean, grouper in New England, king crab outside the Northwest, Canada or Alaska, etc. I also greatly prefer Pacific salmon over Atlantic and then only on the West coast. Here at home, I enjoy walleye, perch, bluegill and Great Lakes whitefish. I'm not hard and fast, mind you, but those are my preferences. So, I'm pretty much in agreement with Mike R on Dover sole. Probably worst of all is Maine lobster in Florida!

I've rarely had shrimp that were exceptional anywhere; I'd like to try some sometime. The exception is those little tiny bay shrimp in Oregon and San Francisco. And scallops, which used to be horrible outside their natural areas, but are now at least palatable pale severely next to the ones I had in Maine.
 
Yep...you "get it"......as much as is possible, eat local, eat fresh, and support the local economy .....:cool:
