As our vacation expereince comes to a close, we enjoyed a magnificent week in Paradise. The Island is 99% back in full swing since Irma, better than ever, IMHO. Dare I say, maybe the best time we have enjoyed yet on the Island experience. Maybe, it is because we are appreciating one another more each day of our marriage. We are so grateful for each day we awake in each others arms. What ever the case might be, it was GRAND!
Our tradition is to dine with JC on our final night. Last night was no different. The new arbor at their entrance is wonderfully crafted, great carpenters whom built the structure.
As always, we were very warmly greeted by JC and his staff. Love the sounds of his claps when food is ready for pick up. Such a kind man!
We started the night with two separate Amuse Bouche, one was crab puffs with a delicious dipping sauce, other was super yummy tuna spread on toast. We both enjoyed the Foie Gras Terrine with Passion Chutney, what we have been waiting the past 4-months, since our last visit to enjoy. JC does Foie Gras extremely well. For our main, I ordered the Sea Scallops Rossini with vegetable parmentier. Anita ordered the Roasted Beef Filet with potatoes, croquette. What a glorious night to be US.
 
Indeed! A grand finale of a meal.

Thanks again for your reports and reminding us to appreciate that life is good and to love the one you are with in our island paradise.

He and his entourage always arrive on St Jean at 1:00 on Sundays and they have lots of Tupperware containers
Must be quite the beach picnic. They sit right beyond Carib Watersports and they have a big
weekly Sunday dinner. At least 12 people every week.
 
A close second to actually being on the Island is Dad and crew being on the Island and recapping his days and meals!!!
