I often get the same dish, Andy . . . only my favorite Italian restaurant uses green (spinach coloring?) & white noodles. It's called "Paglia e Fieno" . . . and is delicious! Maybe you've seen it also?
 
And I have enjoyed that Paglia e Fieno in a sauteed shrimp and onion and garlic in a light tomato sauce. YUMMY,
