Sad to see Charlie Trotter's go, but I admit that it has been at least five years since I've been there. Our first trip, I thought he was true genius. Every plate was perfect. He gave thought to the entire package. Dishes were balanced based on color, texture, and taste. It was, to that time, the best meal I've had in my life.
My taste has changed in the years since. While I still appreciate it, I prefer either the amazing creativity of Alinea, or the pure flavors and local ingredients of places like Naha.
For those who don't get to Chicago often, try either Moto or Ing. Chef Homaru Cantu is doing some really interesting stuff. His places are make fine dining fun. He's also hilarious on Facebook.
