Easy Peanut Butter Fudge (From Alton Brown)

1 cup (2 sticks) butter
1 cup peanut butter
2 tsp. vanilla
1 lb. powdered sugar (which equals 3 3/4 c.)

Microwave butter and peanut butter in large bowl for 2 minutes. Stir and microwave on high for 2 more minutes, or until completely melted (you can also do this on the stovetop if you prefer). Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon.

Pour into an 8x8 pan lined with waxed paper and smooth top with spatula. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week. Because of the high butter content, this fudge will become very soft if left out, so it is best stored in the refrigerator.
 
I find this hard to believe as I was castigated for using a microwave to warm up leftover turkey and dressing :) DAISNAID.
