Rumors from multiple sources are that it will be an Israeli restaurant. There are rumors about many things on St Barth, and some of them are even true. Who knows how much truth there is in this one.
 
What type of food would one find at an Israeli restaurant?

Couscous I know.

this is a culinary blind spot for me.
 
It’s been a while, but we had an exceptional meal at Zahav. They’ve retained their high ratings since so we’d definitely return.

We were in Public for sunset in late November and they were working on the site:

the rumour we heard, which obviously may not be true.. is that its the same group that did this Israeli restaurant in London (which ive eaten at and it was outstanding)

The former Maya’s Restaurant is being transformed & will be re-opened by folks who operate the highly respected Restaurant Balagan in Paris — http://www.balagan-paris.com/en/balagan. Renovations at the restaurant, which has been totally gutted, have been delayed as a result of bureaucratic issues with the Collectivité.
 
I am pretty sure Dennis has it right. I too Have heard the Balagan connection mentioned numerous times.
