The sad thing is the transformation from privately owned restaurants to those owned by groups from off the island.. which is now the case for Tamarin, Quartier General, La Petite Plage, Fouquet's, Joel Robuchon, La Guerite, Kinugawa, etc... I'd not choose a chain restaurant in NYC or Las Vegas or Paris, but always try to suss out the little place where a chef is trying to get that first star or is master of his/her own kitchen - such as Maya's, Zion, or Esprit Jean-Claude Dufour... same as hotels, with Villa Marie, Le Barthelemy, Carl Gustaf, Pearl Beach.. are part of boutique hotel groups, and Guanahani, Cheval Blanc, and Eden Rock are all affiliated with large portfolios... it's a global homogenization process...but not my cup of tea.
