Check out http://www.hookscheese.com/cheese descriptions.html. Everything they make is wonderful. For a rare treat try their 15-year cheddar. I should also say that I truly love the French cheeses in SBH. Looking forward to a trip this fall to Switzerland to see what treasures are in store for me. I'm in awe of the descriptions of the lengths they go to to give their cheeses a unique terroir.

This place looks great. I am a Madison-area native originally and typically buy my cheese from Brennan's but will check this out.
