Well, if any of you get tired of warm, exotic tropical destinations (hahahah right) there's always my home state, Alaska!
Lots of cruise packages offered, mostly through the Southeast of AK.
This website is maintained by a local who takes beautiful pictures of Juneau. How can you resist after seeing the beauty??
Lots of small, quaint bed and breakfasts that offer unique views and experiences. Or stay at the Baranof!
Also, the Taku Lodge is only a quick boatride away!

While the cruises look fun, were I to visit Alaska (I lived there for two years) I would the following:
1. Fly into Anchorage
2. Stay three days at the Captain Cook
3. Dine at The Marx Brothers if they are still there, Double Muskey if they aren't
4. Zip down to Homer and stay a day or two at Land's End, with the obligatory daytrip to Halibut's Cove
5. Go back to Anchorage (catching Portage Glacier and Alyeska along the way and laughing at The Combat Fishers along the rivers)
6. Head over the Wasilla to see Togo The Stuffed Iditarod Dog
7. Catch the train up to Denali and stay at Harper's Lodge for a couple or three nights
8. Come back to Anchorage for another day or so and then fly back
I have cruised the caribbean (though not alaska) many times but for my money the best way to see alaska is to be in it, not riding past it. I realize you miss Juneau and all the little fishing villages along the souteast this way, but what the heck.
Oh, if you get a lottery ticket, go to Brooks Lodge and see Da Bears.

Well you're entitled to your opinion of course, but I would definitely not put Anchorage on my list of places to go. You kinda have to because Anchorage is THE hub up here, but this town is the armpit of Alaska. Full of crime and just dirty. And the Captain Cook's rooms are overrated. Stayed there myself a few years ago.
I think most of your ideal trip up here is good, but you're shooting yourself in the foot by ruling out the southeast. I only suggested the cruise because that is what some people prefer. If you want to do your own thing, ride the state ferries around. Juneau is taking delivery of a new high-speed ferry here in the next few weeks.
